What is Tokishirazu Salmon and why is it so expensive?
Tokishirazu (時知らず, "time-ignorant") is a wild Chinook salmon harvested out of season before spawning — it hasn't expended energy on reproduction, so fat content is exceptionally high. The result is a luxuriously buttery texture that farmed salmon cannot replicate. Availability is brief and seasonal. Available at Sashimi DC, Rice Market, 1608 14th St NW, Washington DC.
Market Update: Japanese Silver Week
Japan is observing its autumn public holidays this week (Silver Week), with Toyosu Market closed. We will not be receiving our usual shipment of fresh Bluefin Tuna.
The Silver Lining: We are hosting a Special Discount on our Frozen Inventory. Our frozen seafood is super-frozen at peak freshness, locking in cellular structure and flavor perfectly. A fantastic opportunity to stock your freezer with high-quality cuts at a fraction of the price.
