World Premiere: Sasshu Salmon Ikura
We have just received a very special shipment: Sasshu Salmon Roe. To our knowledge, we are among the very first in the world to work with the roe from this specific salmon line. I am currently preparing a special Ikura Shoyuzuke (soy-marinated roe) in the kitchen — verdict coming soon.
Market Update: High-Grade Kinmedai Upgrade
The regular grade Kinmedai (Splendid Alfonsino) was out of stock at the supplier, so we received the High-Grade Kinmedai fillets instead. Richer fat content and sweeter meat — perfect for simmering (Nitsuke) or searing.
