Good news on the Uni market: prices are stabilizing while quality improves. The Uni we received this week is a full grade higher than previous weeks, yet the price remains the same. We are very optimistic that next week's Valentine's shipment will be spectacular.
Product Verdict: The Sasshu Salmon Ikura
Last week I teased the arrival of the "World Premiere" Sasshu Salmon Roe. I have now prepared and tasted it.
The verdict: * Size: The eggs are smaller than wild Alaskan salmon roe — a natural trait of sustainable, farm-raised fish * Texture: Incredible. Firmer and pops more satisfyingly than the Alaskan variety * Flavor: Clean, rich, and perfectly marinated in our house soy blend
It is definitely worth a try.
