The Bluefin Tuna that arrived today is a true winter masterpiece, boasting incredibly beautiful marbling. Because of the low water temperature in the past weeks, we actually have a larger proportion of Otoro (supreme fatty tuna) than Chutoro this week. If you have been waiting for the rich, melt-in-your-mouth experience of premium Otoro, this is the week to visit.
