As we transition from late summer into early autumn, we have a beautiful selection of seasonal favorites arriving fresh from Japan.

Murasaki Uni: Known for its delicate mustard-yellow color, Murasaki offers a lighter, more refined flavor profile compared to other varieties. It delivers a clean, sweet oceanic minerality that melts effortlessly on the tongue without being overpowering.

Madai (Japanese Red Seabream): Often considered the king of white fish in traditional sushi, Madai has a beautifully firm, slightly crisp texture and a clean, subtle umami flavor. Phenomenal served sashimi style with a touch of sea salt and citrus, or layered with fresh Shiso.

Tokishirazu Salmon: The legendary "Time-ignorant Salmon" is in stock. Because this wild-caught young salmon is harvested out of season, it hasn't expended its energy on spawning. The result: exceptionally high fat content and a luxurious, buttery texture that farmed salmon simply cannot replicate.

Kinmedai (Splendid Alfonsino): This deep-water fish boasts its unique delicate sweetness, perfect for lightly searing with a blowtorch (aburi style) to release its aromatic oils.

Hokkaido Scallops: Plump, sweet, and perfectly tender.
