This Week's Uni — Bafun from Hokkaido
This week we have Bafun Uni (馬糞ウニ) from Hokkaido — the variety you'd find at a high-end omakase counter in Tokyo. Bafun Uni is the bolder, more assertive of the two main commercial Uni types: intensely briny, richly sweet, and with a deep golden-orange color that signals high carotenoid content from its kelp diet. If Kita Murasaki Uni is contemplative, Bafun is declarative. It makes its presence known immediately.
Uni quantities are limited every week. Reserve online before coming to the storefront — walk-ins frequently find it sold out.
Summer Bluefin — What Changes
A note on quality this week that regular customers will want to know: the Nagasaki Bluefin Tuna has less fat this week than you may be accustomed to from the winter and spring fish. This is entirely normal and expected — as water temperatures rise through June and July, the fish metabolize fat differently. The Akami (lean loin) remains intense and excellent; the Otoro and Chutoro are genuine but carry less of the heavy marbling you'd see in a January fish. If you are a first-time buyer, this is still exceptional Bluefin by any global standard. If you are a returning customer who has tasted the winter fish, you will notice the difference — the Akami is the cut to focus on through summer.
New Souvenir — Hamaya Father's Day Coffee
A seasonal addition this week: whole-bean coffee from Hamaya, a specialty coffee roaster from Osaka with decades of craft behind them. Their Father's Day Special Blend is in stock now — a well-balanced, medium-roast blend suited to drip or pour-over. A thoughtful gift for the coming weekend, particularly for the coffee drinker who is harder to surprise.
