Market Prices Stabilize — a Better Week
Toyosu market prices have stabilized over the past few days after several weeks of weather-driven volatility. This week's fish reflects that improvement: we received Bafun Uni, Hotate (Hokkaido Scallops), and Kanpachi (Greater Amberjack) as the main weekly items, alongside Nagasaki Bluefin Tuna in all cuts.
Uni and scallops are available in relatively abundant quantity this week — walk-in availability is likely, though online reservation through the shop is still the reliable approach. Kanpachi in early March has been feeding through the late winter and carries more fat than you'd see in the summer fish. Worth ordering if you haven't tried it since autumn.
How to Order Uni for a Future Date
A practical note for customers who want to plan ahead: the online shop supports future-date pickup scheduling for Uni and other items. When you select "store pickup," click on the date and time indicator to choose a future date and hour — you are not locked into same-day pickup. This is the most reliable way to guarantee Uni for a specific occasion without having to call or message in advance.
Other items — Bluefin Tuna, Scallops, Salmon — are generally available at the counter through the weekend without reservation, but Uni moves faster than anything else we carry. If you want it on Saturday evening, reserve it Wednesday.
Bluefin Tuna — Late Winter Quality
We are now in the tail end of peak Bluefin season. The January and February fish were exceptional; March fish are still very good but the fat content will begin declining as water temperatures slowly rise through spring. The Otoro and Chutoro are still excellent now. By April the fish will be transitional, and by June it will be summer fish again — leaner and better suited to Zuke preparations than to straight Otoro.
If you have been meaning to order the premium cuts this winter and haven't yet, the next three to four weeks are the remaining window. We will always tell you honestly where we are in the seasonal cycle.
